Boston Cream Poke Cake
/I have a ridiculous amount of recipe posts that are unfinished and I am trying to get them all posted. They are good ones that deserve to be shared. As recipes, I mean. I kinda want this cake all to myself!
Boston Cream Poke Cake is so easy and delicious! It starts out with a regular yellow box cake mix. Simply bake it according to the directions on the box and poke holes all over with the handle end of a spoon or spatula. This part is therapeutic and allows the instant vanilla pudding to ooze down into the cake. Finally, melted chocolate icing is poured all over the top.
It is messy, but definitely worth it!
Boston Cream Poke Cake
1 box yellow cake mix, prepared according to the directions on the box and cooled
1 package vanilla instant pudding
2 cups cold milk
1 16oz. container chocolate frosting
Bake the cake and allow to cool. Using the handle end of a wooden spoon or spatula (about 1/2” diameter) poke holes about 1” apart and half the depth of the cake over the entire top. In a small bowl, whisk together pudding mix and milk. Pour evenly over cake and refrigerate until firm. Remove foil seal and heat frosting in the microwave for 30 seconds to melt slightly. Pour and spread over the top of the cake. Chill until ready to serve.
