French Toast Muffins
/I don’t know about you, but we have been cooking a lot of extra meals at home lately! At least once a week I plan to make some sort of muffin for breakfast, but my grocery store is completely out of baking powder. This blog post is officially dedicated to my friend, Janet, who saved the day!
These muffins are pretty simple to make and my kids love them! The cinnamon sugar topping is definitely the best part! The kids like to help by dipping them in the melted butter and sugar.
French Toast Muffins Recipe
Muffins
2 cups flour
2/3 cup sugar
2 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1 egg
1 cup + 2 Tbsp milk
6 Tbsp butter, melted and cooled slightly
1 tsp vanilla
Topping
1/2 cup sugar
1/2 tsp cinnamon
2 Tbsp melted butter
Heat oven to 375. Place paper liners in muffin pans. In a medium bowl, whisk together dry ingredients. In a large mixing bowl, beat egg. Add milk, butter, and vanilla. Slowly add dry ingredients and stir until blended. Pour in muffin pans, filling about 2/3 of each one. Bake for 20-22 minutes. Cool slightly. Melt the remaining butter in a small bowl Mix cinnamon and sugar together in another bowl. Dip the top of each muffin in the butter, then cinnamon-sugar mixture.
Makes 18 muffins.
