Easy Apple Dumplings
/Apple dumplings have become our annual Thanksgiving morning breakfast!
I used to be hung up on making everything from scratch, but shortcuts are OK sometimes, especially on a busy morning in the kitchen. These apple dumplings use canned biscuits for the dough so they come together pretty quickly. I get the jumbo biscuits in regular or buttermilk. For the apples, I use whatever we have on hand which is usually Fuji because they are my favorites although they are pretty sweet already. Use whatever you like.

Easy Apple Dumplings
Ingredients:
2 apples
1 can of 8 jumbo biscuits
1 cup sugar
1 Tbsp cinnamon
1/2 cup (1 stick) butter
1/2 tsp vanilla extract
1 cup water
Preheat the oven to 375 F.
Mix 1/4 cup sugar with the cinnamon in a small bowl or cup.
Peel, core and slice the apples vertically into 8 slices each. (I use a corer/slicer tool to make this easier!) Separate each biscuit into 2 layers. Press the biscuit layer slightly to flatten. Place an apple slice on one side of the biscuit layer and sprinkle with the cinnamon-sugar mixture- about 1/2 tsp. Fold the biscuit over the apple slice and pinch the edges slightly. Place the dumpling in a 9x13 baking dish. Repeat for the remaining apple slices and arrange neatly in the pan.
In a medium saucepan, mix the water, butter, vanilla, and remaining sugar. Bring the sugar mixture to a boil over medium heat, stirring constantly. Pour over the apple dumplings. Sprinkle the remaining cinnamon-sugar mixture evenly over the top of the dumplings. Bake 30-35 minutes until the dumplings are golden brown and the apples are tender.
